SUMMARY
Within the spirit of “Making People’s Dreams Come True”, this position is responsible for maintaining cleanliness standards and organization in the main kitchen, restaurant and banquet areas while delivering Raving Fans customer service to both internal and external customers.
Essential Duties and Responsibilities

As a dishwasher at The Brownwood Hotel and Spa, the main job duties of this position include keeping the Back of House clean and organized, cleaning all dishware and small wares using the Three Compartment Sink and preparing a variety of ingredients and items.
Three Compartment Sink:
The Three Compartment Sink is used to clean all our pots, pans, food containers, cutting boards and other food contact items. Before cleaning any dishware in the Three Compartment sink you must first thoroughly clean the drain boards and sinks. Use a mild detergent solution for this. Next, check that the detergent and sanitizer are connected. Fill the first sink with detergent and water. The second sink is filled with clean hot water and the third or final sink is filled with warm water and sanitizer. Remember to wash your hands before you begin!
For cleaning items follow the steps outlined below:
- Rinse, scrape or pre-soak all items.
- Wash items in the first sink with the detergent solution at least 110°F.
- Rinse the items by immersing or spraying them using hot water in the second (middle) sink.
- Sanitize the items in the third sink by immersing them in the sanitizer solution at 75°F.
- Allow the items to air dry on the drain board.
- Keep the kitchen organized by performing the following tasks:
o Keep all shelves clean and neat.
o Put pots, pans, and containers away.
o Put away all paper goods and supplies.
o Store all food items using FIFO, First-In First-Out.
o Break down and throw out all empty boxes and trash.
Cleaning includes the following tasks:
o Sweep and mop floors frequently.
o Clean all floor drains.
o Clean prep tables and surfaces after each use.
Educational/Experience Requirements
High School Diploma or General Education Degree (GED); three to six months related experience and/or training.
Language Skills
Ability to speak clearly and listen attentively to guests and other employees and managers.
Ability to read and/or follow written and verbal instructions and implement the same.
Ability to apply common sense understanding to carry out instructions furnished in written, or oral form.

The employee is occasionally required to climb or balance and stoop, kneel, crouch, or crawl. This position requires prolonged hand and wrist movement/usage. The employee must occasionally lift and/or move up to 30 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.

While performing the duties of this job, the employee is regularly exposed to damp and/or wet locations. The employee is frequently exposed to smoke, steam, high temperatures, humidity and extreme cold.
The employee is frequently exposed to moving mechanical parts, risk of electrical shock, and vibration due to kitchen equipment. The noise level in the work environment is usually moderate.
NOTICE: The hotel business functions seven (7) days a week, 24 hours a day. All associates must realize this fact and be aware that at all times it may be necessary to move associates from their accustomed shift as business demands. In addition, this is a hospitality business and a hospitable service atmosphere must be projected at all times.
