Position Overview
Under the guidance and supervision of the Back of the House Managers and within the limit of established policies and procedures, responsible for duties of the stewarding operation.
Key Responsibilities
Essential Job Functions and responsibilities: Standard steward shifts
- Ensure set up for the day’s functions are delivered to the appropriate room/floor
- Polish silverware items if necessary
- To ensure all sugar bowls, salt & pepper shakers, creamers, breadbaskets, serving utensils, coffee pots and water pitchers are polish and in adequate supply for each outlet.
- Prepare coffee for all Room service.
- Restock all pantry cocktail napkins, hot cups and lids, candles, votives, sternos and to go containers.
- Ensure all reach-in refrigerators are clean and in good working order.
- Ensure the safe handling of all equipment as per SOP.
- Ensure Sani buckets are filled with solution, cloths and placed in the correct location.
- Assist with the breakdown of all functions.
- Ensure pantries and spaces are clean and always organized.
- Wash dishes, glassware, flatware, pots, or pans using dishwashers or by hand.
- Check the dish machine and ensure all chemicals associated with it are properly connected and filled.
- Store clean dishes, utensils, or cooking equipment in designated storage areas.
- Stock kitchen lines with clean equipment such as glassware, plates, and pots.
- Sort and remove trash, placing it in designated pickup areas.
- Clean and maintain work areas, equipment, utensils, and dining areas to maintain sanitation standards.
- Sweep and mop floors in the kitchen, and other designated areas.
- Maintain cleanliness of kitchen equipment, such as stoves, ovens, grills, and countertops and flattops.
- Empty and clean trash containers daily.
- Empty fryer oil in alignment with schedule in the proper container located in the garbage room.
- Ensure all cleaning supplies are stocked and available for use.
- Changes water of machines and sinks every two hours, or more often as required by business levels.
- Always follow proper sanitation procedures and guidelines.
- Comply with all safety and health regulations.
- Report any maintenance or repair issues to the appropriate personnel.
- Collaborate with team members to ensure efficient operation of the kitchen and dining areas.
Essential Job Functions and responsibilities: Banquets
- Ensure set up for the day’s functions is delivered to the appropriate room/floor.

- Ensure the delivery of food to each function room per BEO.
- Prepare coffee for all functions.
- Ensure chinaware and equipment are provided as per function.
- Restock all pantry cocktail napkins, hot cups and lids, candles, votives, sternos and to go containers.
- Ensure all reach-in refrigerators are clean and in good working order.
- Ensure the safe handling of all equipment as per SOP.
- Assist with the breakdown of all functions.
- Ensure pantries are clean and organized at all times
- Return all items inclusive of items in fridges as well as boxes to the original location in proper order in the main kitchen and storerooms.
QUALIFICATIONS And REQUIREMENTS
- To follow the orders of the Stewarding management
- To report all broken equipment, challenges on shift or comments to the stewarding manager on duty
- Maintain a positive and professional attitude while working in a fast-paced environment.
- To inform the manager on duty in case of absence from the station
- To take personal interest and pride to ensure that all functions adequately supplied and F&B areas are kept clean at all times
- To follow the Pierre Guiding Principles
- To report for work punctually wearing the correct attire
- To attend all scheduled trainings and meetings
- To be conscious of all safety rules and work appropriately.
- Familiar with kitchen ware, rotation of products, and stocking.
- Good communication skills needed and must be a team player.
