Job Summary
Plans, directs and controls the function of the Nutrition Services department for assigned facility.
Duties And Responsibilities
- Provide on-going supervision to kitchen staff, including Nutrition Services supervisors in compliance with policies, procedures and standards. Hire, coach, train, evaluate and terminate staff in accordance with policy, coordinating activity with Center Administrator.
- Standardize methods in which work will be accomplished. Maintain and ensure implementation of written procedures for the operations of the dietary department.
- Assure adequate inventories to meet department needs within budgetary guidelines.
- Develop and maintain food production line to assure timely delivery of meals. Monitor food preparation and cooking for both regular and modified diets.
- Provide regular, documented inspections of Nutrition Services; ensure compliance with agency, state and federal food service regulations.
- Ensure cleanliness of kitchen and dining facilities; assist with cleaning duties as required to maintain standards.
- Participate in, monitor and respond to 'customer satisfaction' surveys.
- Visit residents regularly to evaluate the excellence of meals served, likes and dislikes and the quality of the food service program.
- Assure the implementation of all functions of the Nutrition Services as it relates to the facility.
- Participate in goal-setting and ensure achievement of facility and organization goals.
- Complete clinical assessments within the Certified Dietary Manager (CDM) scope of practice, as identified by the Registered Dietitian.
- Assist in preparation of annual operating budget and capital expenditures. Review financial reports and budget variances, identifying areas of opportunity.

Job Qualifications
Education, Training, and Licensure/Certification
- Associate's degree in a relevant field of study required; Bachelor's degree preferred.
- Certified Dietary Manager (CDM) accreditation.
- ServSafe certified.
Experience
- Minimum two years' experience in a health care food service operation.
- Minimum two years in a supervisory role; minimum one year in a CDM role.
Knowledge Skills And Abilities
- Knowledge of Long Term Care Survey Manual.
- Knowledge of federal guides for food handling.
- Strong leadership skills with knowledge of employee relations and labor laws.
- Ability to read, write and speak English.
- Effective oral and written communication skills.
- Effective Microsoft Office skills - Excel, Word, Outlook.
- Strong problem solving skills with ability to analyze data, identify areas of opportunity and implement effective solutions.
- Strong sensitivity skills with ability to display compassion with vulnerable adults who may become angry hostile or combative.
- Ability to work effectively in a diverse cultural work environment.
