POSITION SUMMARY: The Kitchen Steward reports to the Executive Chef and is responsible for assisting in the cleaning and sanitizing of the kitchen and equipment. Responsibilities include, but are not limited to, washing dishes, glassware, silverware, cookware, kitchen equipment and returning them to their proper areas, and assist with stocking. The Kitchen Steward must have the ability to creatively solve problems in a fluid environment.
ESSENTIAL DUTIES AND RESPONSIBILITIES:

- Cleans cookware and utensils and stores inverted in appropriate areas.
- Collects cookware from cooking area and stages according to specifications.
- Prepares dish area and maintains dishwasher machine for operation (water levels, temperature, and cleanliness).
- Keeps kitchen area clean by sweeping, lifting mats, mopping, dusting and cleaning equipment.
- Cleans and sanitizes all work surfaces and cookware areas.
- Sets up and breaks down area with racks, silver tubs, soap, sanitizer, storage racks and floor mats.
- Maintains cleanliness and organization of all work areas.
- Maintains periodic automatic replacements (PARs) for cleaned kitchen equipment in kitchen, lines and outlets.
- Closes-up dish room and pot washing areas to accepted standards.
- Performs other duties as assigned.
REQUIRED KNOWLEDGE AND EXPERIENCE:
Qualifications
Experience and/or Education
High school diploma or equivalent. One year of related experience, preferred.
Certificates, Licenses, Registrations
Individuals must be able to successfully pass the Tribal Gaming Agency (TGA) Background Check. Must possess a valid driver’s license, and maintain a driving record that is satisfactory to the Tribe’s insurance carrier.
