REPORTING RELATIONSHIP: The Kitchen Steward reports to and takes direction from the General Manager, the Executive Chef, the Assistant Manager, and the Floor Supervisor.
BASIC FUNCTIONS: The Kitchen Steward assists with all BOH tasks and functions, rotating areas as needed and/or assigned. This position requires exemplary organizational and multi-tasking abilities. Attention to detail is necessary to deep clean and maintain equipment and work areas according to in-house, local, state, and federal regulations for safety and food sanitation. This position also requires food prep abilities to support the line in and not run out of product. Mechanical skills to operate the dishwashing machine and other kitchen equipment is also required.
ESSENTIAL DUTIES AND RESPONSIBILITES:
- Understand and follow all company policies, procedures, standards, specifications, and guidelines.
- Must arrive on time, in uniform, and ready to work for each shift.
- Comply with all federal, state, city, county, and municipal food safety and hygiene regulations.
- Required to attend all mandatory meetings when scheduled.
- Complete all opening and closing duties for assigned workstation.
- Work as a cohesive, unified team with the rest of the BOH staff, filling in where needed to ensure efficient operations.
Cleaning & Sanitizing
Deep Clean & Sanitize - using correct cleaning products and tools specified, including but not limited to:
- All shelves and walls in all BOH and service areas, utilizing a rotation schedule.
- Doors (interior & exterior), including handles and clear hanging sheets.
- Refrigerator walk-ins.
- Floor drains (upstairs & downstairs).
- All service carts (5).
- Elevator, including walls, railings, doors, and floor.
- Garbage cans and bus tubs.
Inspect & Clean
- Crushed ice machine for mold/mildew, burning and draining to clean and sanitize; deep clean air filter and drop guard.
- Bigice machine for mold/mildew, burning and draining to clean and sanitize; deep clean filter.
- Soda ice machine for mold/mildew, burning and draining to clean and sanitize; run soda nozzles through dish machine and replace.
- Sweep and mop upstairs service area, break room, and hallway; remove and clean floor mats daily.
- Routinely walk the restaurant to identify dirty walls, surfaces, or floors (i.e. stairwell hallway, handrails, walls, and glass cabinets) and clean; routinely wipe down and sanitize all tables and chair (including bases and railing), light fixtures, and sideboards.
- Work with Executive Chef and Managers to create and maintain a regular and consistent cleaning schedule, adjusting to the immediate needs of the restaurant.
- Keep all work areas clean and safe; ensure all walkways are clear and floors are dry at all times.
- Clean and maintain all kitchen equipment ensuring proper storage; communicate with management regarding all items in need of maintenance or repair.
- Assist Dishwashers with transport of trash, recycling, and compost from the kitchen to the dumpster.
- Follow all safety and sanitation practices when handling food and beverages.
- Assist bartenders with transporting stock from storerooms when needed.
- Clean and polish bar areas when needed.
- Communicate with management regarding all product shortages and/or broken equipment.
Food Prep
- For each work shift, set up all ingredients and produce all items on the prep list.
- Follow “First In, First Out (FIFO)” process for prepared foods, using clean containers, labeled with date prepared and in proper rotation.
- Maintain cleanliness and organization of all food in dry storage walk-ins and freezers with all products labeled, dated, and rotated properly.
- Maintain a clean, orderly kitchen and station by washing dishes, sanitizing surfaces, taking out trash, with attention to sanitation of all knives, cutting boards, and equipment.
- Restock, organize, and maintain the back up of all ingredients to avoid running out of product.
- Responsible for clear communication and inter-station timing with all kitchen team members.
- Place all items into clean containers, label with date, and store in the walk-in at the end of the shift.
- Learn how to prepare multi-Asian menu items.
- Maintain a safe, clean, and sanitized work environment at all times.
- Must be able to handle high-volume of production during lunch and dinner rushes.
- Communicate with management regarding all product shortages and/or broken equipment.
- Perform additional duties or special projects as requested by management.
MINIMUM QUALIFICATIONS AND SKILLS:
- One (1) or more years of back of house and kitchen production in high volume restaurant kitchen; understanding of Asian cuisine a plus.
- Understanding of various food ingredients and preparation equipment and procedures.
- Ability to read and follow a recipe by weighing and measuring ingredients.
- General knife handling skills, washing, peeling, chopping, cutting.
- Must have the ability to work cohesively with and be part of a team.
- Must be dependable, reliable, responsible, and punctual.
- Must be able to take and understand directions and work on multiple tasks simultaneously.
- Possess a strong work ethic with a commitment to show up on-time and maintain attendance standards.
- Knowledge of basic food handling and sanitation guidelines.
- Knowledge of basic kitchen equipment operations.
- Must be able to handle high-volume of production during lunch and dinner rushes.
- Must have good communication skills and be able to take and understand directions in both written and spoken English.
- · Must be able to pay attention to detail, stay organized and work well under pressure in a fast-paced environment.
PHYSICAL REQUIREMENTS
- Must possess the ability to work in a standing position for long periods of time (minimum of 8 hours a day).
- Must be able to frequently reach, bend, stoop, and lift (up to) 50 lbs. on a regular basis.
