POSITION SUMMARY: Generally, the Cook and/or the Prep Cook are responsible for the foodservice needs to satisfy Black Tap, LLC’s guests including: preparing, seasoning, and cooking food items as described on the menu, and in accordance with Black Tap, LLC’s recipes and operational guidelines. Other duties may include ordering supplies, maintaining and organizing inventories, keeping records and accounts, general cleaning and stocking. Each Kitchen Staff member must become thoroughly familiar with the procedural and technical details of Black Tap, LLC’s professional and accommodating service, standard operating procedures, including specific appearance standards, guest interaction procedures, food-handling and storage procedures, equipment and tool maintenance, and the overall operation of our kitchen.
EXPERIENCE & QUALIFICATIONS:
- Shows confidence, energy, and enthusiasm with a professional, clean appearance, and a friendly, helpful, approachable demeanor.
- At least two (2) years experience as cook or food prep worker, preferably in fine dining.
- Certified - or willingness to become certified - in food safety, handling and storage techniques and familiar with local health and safety code regulations.
- Basic knowledge of food handling, preparation, storage, cuts and cooking; including the ability to distinguish meat as rare, medium rare, medium and well done.
- Understand the operation and maintenance of all machines and tools used for food preparation.
- Satisfactory physical and mental health to perform the requirements of the job, and to work with the public in compliance with applicable foodservice health and safety regulations, (must not have any diseases that can be transmitted through food).
- Able to perform the essential functions of the assigned position with or without reasonable accommodation, to meet Black Tap, LLC’s service and operations standards within company policies and procedures.
- Be available and willing to work all scheduled shifts, including working weekends and holidays.
- Capable of multi-tasking, leading and communicating with others, able to express and exchange ideas in spoken and written English preferred.
- Basic math proficiency.
- § Better than average organizational skills.
EDUCATION: High school diploma or GED preferred. Some college or culinary education preferred.
ESSENTIAL FUNCTIONS & POSITION RESPONSIBILITIES:
- Prepare food dishes using specified ingredients, recipes, presentation standards and production guidelines to produce food within preset time limits.
- Follow all required food handling and sanitation procedures to ensure the quality of menu items served and the health and safety of guests and co-workers, including: regularly inspecting food preparation, storage and serving areas to ensure observance of safe, sanitary food-handling practices.
- Follow quality control procedures, designated weighing procedures, inventory maintenance and portion control guidelines for menu items.
- Properly use various kitchen utensils and equipment; and consistently portion, arrange, and garnish food within operational standards.
- Participate in and meet requirements of daily line checks.
- Estimate expected food consumption; then requisition or procure food and supplies from storage.
- Clean, stock, and re-stock all food, seasoning and other supply items in the food prep area, including following a daily prep list to ensure proper prep standards and quantities prior to beginning of each shift.
- Observe and maintain daily condition of all physical facilities and equipment in the kitchen and make recommendations for corrections and improvement as needed.
- Comply with all of Black Tap, LLC’s employment related policies and procedures.
- Express and exchange ideas with co-workers and guests, including responding to requests for special meals, ingredient changes and special cooking instructions.
- Demonstrate effective teamwork and cooperation with co-workers, management, vendors and/or suppliers and refrain from accepting gifts or free samples from vendors for personal use in exchange for using their services.
- Be dressed in a clean uniform with acceptable footwear and other protective gear, ready to begin at start of all scheduled shifts, and work until the end of scheduled shifts, unless authorized by management for approved shift or work schedule change.
- Learn to sufficiently perform all job functions in the kitchen.
- Maintain reliable transportation to get to work on time.
- Perform other duties as assigned, such as side-work, cleaning and maintaining assigned work areas, preparation of co-worker meals, or administrative projects.
- Regularly attend all staff meetings, training, informational and education sessions.
- Ability to stand and walk for up to eight (8) hours during a shift (with limited breaks); carry up to 50 lbs. and push cart weighing up to 150 lbs. without straining; and sustain repetitive motions of legs, feet, waist, back, shoulders, arms, wrists, hands and fingers.
- Ability to mop, sweep, scrub, and wipe the kitchen areas as well as other cleaning procedures.
- Protect Black Tap, LLC and guests by adhering to sanitation, safety and alcoholic beverage control policies.
- Contribute to Black Tap, LLC’s success by welcoming relevant, different and new requests; ideas and opinions for improving operations and service; helping others with assigned duties; and willingness to work towards meeting and exceeding established revenue goals.
